Exclusively from the Moppity Vineyard in Hilltops, New South Wales. The high altitude (450m above) coupled with the dry summer and autumn, provides excellent ripening conditions. The rich red soils and the old vines (average age of 40 years) enable the production of wines with great intensity of flavour and finesse.

Fermented in open vats with cultured yeast, with twice daily pump overs. The must is pressed towards the end of fermentation, which is finished in barrel and matured in a mixture of American and French oak (both new and used) for 12 months, lightly filtered

You can enjoy it now or cellar for 10-15 years from vintage.

A wonderful accompaniment to roast lamb, grilled steaks, ribs.
